1/2 cup chopped onion
1/2 cup chopped carrot
2 bay leaves
3 cups port wine

Steps:

  • Combine all of the ingredients in a medium-size saucepan over medium heat and bring to a boil.
  • Continue to boil the mixture until it thickens and reduces to about ½ cup, about 45 minutes.
  • Strain through a fine-mesh strainer and let cool.
  • Use at room temperature. Makes ½ cup.
