SIMPLE BLACK BEANS & RICE image

This quick and easy dish comes from Kroger's website, and I have tweaked it a bit. I'm crazy about any kind of beans with rice. This will be a welcome change to my menus. Photo: Kroger.com

Number Of Ingredients 7

1 Tbsp vegetable oil
1 medium onion, chopped
1 clove garlic, minced
1 1/2 c water
1 1/2 c instant rice
1 can(s) (15 oz.) diced tomatoes
1 can(s) (15 oz.) black beans, drained and rinsed

Steps:

  • 1. Heat oil in a medium saucepan over medium heat. Add onion and garlic; cook and stir 2 minutes. Add water and rice. Bring to a boil. Reduce heat to low; cover and simmer till rice is tender, about 10 to 15 minutes.
  • 2. Stir in tomatoes and beans. Cook until heated through.
