SHRIMP WITH CITRUS DRESSING image

1/2 pound large shrimp, peeled and deveined
salt
1 cup transparent Thai noodles or thick egg noodles
1 tablespoon vegetable oil
2 cups snow peas
1 tablespoon minced jalapeno chile, optional
1 tablespoon minced fresh mint
black pepper
Citrus Dressing
1/4 cup fresh lime juice
1/4 cup fresh orange juice
2 tablespoons plus 2 teaspoons fish sauce
1 rounded tablespoon grated fresh ginger
2 to 3 tablespoons sugar
dash of salt

Steps:

  • Citrus Dressing 1 combine lime and orange juice in smallbowl. Stir in fish sauce, ginger and 2 tablespoons of sugar. Season with salt. Stir and taste. Add remaining sugar if necessary for a dresssing that is a balance of hot, sweet, sour and pungent. Shrimp 1 prepare dressing. Set half aside and pour remainder into a large bowl. Add shrimp to bowl and marinate at room temperture for 30 minnutes. 2 when ready to cook bring 6 cups salted water to boil. Add noodles and cook 8 minutes or until tender. Drain well and place in salad bowl. 3 heat oil in skillet. Add snow peas ans jalapeno chile and saute 2 to 3 minutes. 4 to cook shrimp drain and place on preheated grill. Cook 7 to 10 minutes to total, turning halfway through or broil 4 inches from heat source allowing3 to 4 minutes on each side or until cooked through. 5 to assemble salad pour half the reserved dressing over the noodles and toss well. Add snow peas, jalapeno chile, shrimp and mint. Add remaining dressing and toss. Season with salt and pepper to taste. 6 serve warm or at room temperture
