Shrimp Potato Salad image

This recipe originally came from a ladies church cookbook from First Assembly of God in Cedar Rapids, Iowa. It's not your typical mustard based potato salad.

Number Of Ingredients 12

4-5 c cubed, red potatoes (cooked)
1 bag(s) shrimp (small or medium is fine)
2 Tbsp lime juice
1 clove garlic
1/2 c celery, diced
1/4 c green onion, finely diced
1/2 c sour cream
1/2 c mayonnaise (not miracle whip)
1 tsp salt
1/2 tsp dry mustard
1/4 tsp crushed tarragon
1/4 tsp white pepper

Steps:

  • 1. Rinse shrimp, mix with lime juice and chill.
  • 2. Rub salad bowl with garlic clove.
  • 3. Mix everything (but potatoes) well.
  • 4. Salt potatoes to tasted.
  • 5. Gently stir in potatoes.
  • 6. Refrigerate. This potato salad needs a few hours in the refrigerator for best taste.
