shrimp pesto pasta image

Number Of Ingredients 8

2 pounds shrimp (med size)
1 cup pine nuts
2 bunches italian parsley
10 ounces parmesan cheese
4 cloves garlic
1/2 cup olive oil
1 cube cherry tomatos
1 1/2 pounds farfalle pasta

Steps:

  • cut cherry tomatos in half and evoo and salt and pepper them and place them and the pine nuts in the oven to roast at 275
  • put on water for pasta and salt it
  • clean shrimp and saute in evoo and add a clove of garlic for taste
  • drop pasta
  • in food processor add parsley, pine nuts, parm cheese, and garlic and start the machine adding evoo as needed
  • mix cooked pasta pesto and shrimp and garnish with roasted tomatos ..... enjoy
