1 egg
3 c cooked rice
4 scallions, sliced
2 clove clove garlic, peeled and chopped
1 tsp ginger, peeled and grated
20 cooked shrimp, deveined and chopped
3 Tbsp soy sauce, dark
1 tsp dried red pepper flakes
1/2 juice from half a lime
1/2 bag(s) frozen peas and carrots

  • 1. If cooking rice, do so first, then rinse well to cool.
  • 2. Add the shrimp. If raw, stir until cooked through. Add a half a bag of frozen Peas & Carrots at this point. Stir fry until cooked.
  • 3. Add the rice, handful by handful, stirring constantly to fry.
