SHRIMP AND TORTELLINI SAUTE image

Number Of Ingredients 8

4-6 Med shrimp per person, peeled. You can use thawed frozen shrimp or fresh.
1 sm clove garlic per person, chopped.
1-2 Tbs chopped sundried or roasted tomatoes per person.
1/4 - 1/3 pound spinach per person, roughly chopped and rinsed (water should adhere to the leaves). You can use frozen spinach or fresh.
1/8 - 1/4 tsp Paul Prudhomme's Seafood magic seasoning per person.
1 Tbs grated Romano cheese per person.
1 -2 Tbs extra virgin olive oil.
1/2 cup cooked cheese tortellini per person.

Steps:

  • Heat olive oil in saute pan. Saute tomatoes and garlic on medium/low heat 5 minutes until tomatoes are soft. Add shrimp and seasoning and saute 1-2 minutes per side until shrimp begins to turn opaque. Add spinach and cover pan. Cook, stirring occasionally, until spinach is wilted. Add cooked tortellini and mix. Cover and simmer on low 3-5 minutes until flavors blend. Uncover pan, mix in Romano cheese. Serve in warm bowls.
