SHRIMP AND BOK CHOY STIR-FRY image

1/4 c. Zesty Italian Dressing
1 t. grated gingerroot
2 t. sugar
1 T. oil
1 red pepper, cut into strips
1/2 onion, sliced
1/2 baby bok choy, cut into 1 inch pieces
3/4 lb. uncooked deveined peeled medium shrimp

Steps:

  • 1. Mix first 3 ingredients until blended. 2. Heat oil in large skillet on med-high heat. Add peppers and onions; stir-fry 2 min. Add bok choy; stir-fry 1 min. Transfer to bowl; cover to keep warm. 3. Add 1 T. dressing mixture and shrimp to skillet; stir-fry 2 min. Add vegetables and remaining dressing mixture; stir-fry 1-2 min. or unitl shrimp turn pink and vegetables are heated through.
