A quick and easy variation on the classic Shoofly Pie.

1 cup white sugar
½ cup brown sugar
2 teaspoons cornmeal
1 tablespoon all-purpose flour
¼ cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 tablespoon vinegar
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together white sugar, brown sugar, cornmeal and flour. Mix in butter, eggs, vanilla and vinegar. Pour mixture into unbaked pie shell.
  • Bake for 40 to 45 minutes in the preheated oven.
