Here is another goodie I make when I'm in a hurry. You can change the colors up. I sprinkle about 1 cup of coconut on top that I've dyed with green food coloring. I've done red for Christmas. It's fun. Use your imagination. ;)

Number Of Ingredients 6

8 oz. tub sour cream
8 oz. cool whip
8 oz. package cream cheese, softened
1/2 cup sugar
2 drops green food coloring
1 chocolate graham cracker crust

Steps:

  • 1. Beat together sour cream, cream cheese, sugar and food coloring. Fold in cool whip. Pour into crust and refrigerate overnight. Top with additional cool whip, if desired and put some maraschino cherries on top. (I like to cut mine in half). Don't forget the coconut.

This pie is a bit too sweet for my taste, but it's still very good. I think I'll try making it with a reduced amount of sugar next time.

I'm not a huge fan of mint, but I really enjoyed this pie. The chocolate and cream cheese filling is rich and creamy, and the mint flavor is subtle and refreshing.
