This recipe was a staple in my house as a child and as a wife. It is a great comfort food. You can cook this in the crock pot and add the bacon and cheese at the end. Number Of Ingredients 12

1 c uncooked white or brown rice
1 can(s) whole kernel corn
dash salt and pepper
1 can(s) (8 ounces) tomato sauce and 1/2 cup water
1/2 c chopped onion
1/2 c chopped green bell pepper
1 lb extra lean ground beef, browned
dash salt and pepper
1 clove garlic
4 stips bacon, cut in half
1 c shredded cheddar cheese or cheddar jack blend
1 can(s) tomatoes, canned italian-style and diced

Steps:

  • 1. Layer the ingredients in a buttered 1 1/2- to 2-quart casserole in the order given. Cover and bake at 350° for 1 hour. Uncover and cook 30 minutes longer, until bacon is crisp. Top the casserole with the shredded cheese the last 10 to 15 minutes. Seven layer casserole serves 4.
