SENEGALESE CHICKEN SOUP image

Number Of Ingredients 11

1 large onion, diced
2 cups tomato purée
4 Tablespoons olive oil
2 cups crushed plum tomato
1 teaspoon chopped garlic salt and pepper to taste
6 Tablespoons curry powder 1/2 cup smooth peanut butter
2 teaspoons cayenne pepper
1 lb. white chicken meat, diced
2 teaspoons ground coriander
1 cup scallions, sliced thinly
5 cups basic chicken broth chopped peanuts and cilantro

Steps:

  • Cook onions in olive oil until soft and translucent. Add garlic and cook two minutes. Add curry powder, cayenne pepper and coriander and fry for an additional two minutes. If dry, add a small quantity of olive oil until moist.
