Steps:
- 1. Pat the scallops dry and season salt and pepper. Add oil to a hot skillet cast iron is best. Sear the scallops for about 2 minutes each side. Remove from pan and set aside
- 2. Add the butter to the pan. Stir in the garlic and cook 30 seconds. Return the scallops to the pan. Add the lemon juice and cilantro. Serve immediately
