I used to make only scalloped potatoes and ham but one day I asked myself what would happen if I used pork chops instead of ham. The results were amazingly good, so now I alternate between the two.

Steps:
- 1. Pare potatoes and slice thin; coat pork chops with small amount of flour and brown on both sides in oil in a large skillet.
- 2. In a medium saucepan, melt butter; add flour, salt and pepper, and minced onion. Mix with melted butter till thickened. Slowly add the milk, stirring constantly. Keep stirring until it starts to thicken.
- 3. Place potatoes in Dutch oven or large baking dish. Pour half of white sauce over them. Place pork chops on top. Cover with remaining white sauce.
- 4. Bake, covered, in a 350-degree oven for 1 hour. Remove lid and bake another 30 minutes.
- 5. You may also add 4 to 8 ounces of cheddar cheese to the white sauce while it is hot.
