SAUTEED SUMMER SQUASH WITH BASIL AND TOMATOES image

Number Of Ingredients 10

2 teaspoons olive oil
2 small zucchini, cut into 1/4 inch thick slices
1 large yellow squash cut into 1/4 inch chunks
1/2 cup chopped sweet onion
2 garlic cloves, minced
1 cup grape tomatoes
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup (1ox) shredded asiago cheese
2 tablespoons chopped fresh basil

Steps:

  • 1. Heat oil in a large skillet over med high heat. Add zucchini, squash, and onion, saute 6 mins. Add garlic, saute 4 mins or until vegetables are tender. 2. Add tomatoes, salt and pepper to pan, saute 2 mins or until thoroughly heated. Stir in cheese and basil.
