SAUTEED GREEN BEANS WITH PECANS, FETA & MINT image

1.5 lb green beans
3/4 cup of olive oil
1/2 cup packed finely chopped mint leaves
3/4 cup white wine vinegar
1/2 tspn salt
1/4 tspn pepper
1 cup chopped toasted pecans
1 cup crumbled good quality feta

Steps:

  • Steam and cool green beans Combine oil, mint, vinegar, salt and pepper in food processor Pour over green beans Toss with pecans and feta Serve
