Yield 4 servings

Number Of Ingredients 3

2 Leeks-white part only
2 Granny Smith Apples, cored and thinly sliced
2 teaspoons butter

Steps:

  • Trim the green part of the leeks, leaving just the white and a little of the root end intact so they stay together. Wash well, and dry. Thinly slice. In a medium saute pan over medium heat, melt 1 teaspoon butter. Add leeks, and cook until soft separating, about 3 minutes. Remove from pan, and set aside. Melt remaining teaspoon butter, and add apple slices. Turn heat to high, and cook until apples are lightly browned and soft, about 3 minutes. Return leeks to pan, and toss together to combine. Serve immediately.

I'm not a big fan of apples, but I really enjoyed this dish. The apples are cooked down until they're soft and caramelized, and they're really delicious.

This dish is a great way to use seasonal ingredients. Green apples and leeks are both in season in the fall, so this is a great way to enjoy them at their peak.

This dish is a great way to use up leftover green apples. I always have a few apples that are about to go bad, and this is a great way to use them up.
