- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a skillet over medium heat. Add sausage and cook until browned, 5 to 10 minutes. Place spinach and red peppers in a large bowl and pour cooked sausage and drippings on top. Add feta cheese and mix together.
- Separate and unroll the crescent rolls. Place 1 on a work surface and add a small amount of the spinach mixture. Bring in the top 2 corners and bring the longer end up and around the filling, forming a loose ball. Repeat with remaining rolls and spinach mixture. Arrange balls in a triangular tree shape on a baking sheet, making sure to use some for the trunk of the tree. Make the tree as large as your cookie sheet allows, and use additional baking sheets to create more trees.
- Bake in the preheated oven until golden brown, about 14 minutes.
