SANTA FE CHICKEN & RICE image

A quick and easy recipe I found on a box of rice. Substitute a hotter salsa to jazz it up if you like. 08-01-2018

1 bag(s) boil-in-bag brown rice
1 lb seasoned chicken breast, cut into strips
1 can(s) mexican-style corn, drained
1 can(s) black beans, drained and rinsed
1 c mild salsa
1/2 c (or more) jalapeno monterey jack cheese, shredded

Steps:

  • 1. Prepare the rice according to directions on package.
  • 2. Heat a large skillet and spray with cooking spray. Add chicken and cook until it is no longer pink.
  • 3. Stir in corn, beans, salsa and the cooked rice. Sprinkle with cheese and heat until cheese is melted.
