Time 20m

Number Of Ingredients 10

3/4 c margarine
2 c sugar
2/3 c pet evaporated milk
1 tsp vanilla
1-3.4 oz. box jello instant caramel pudding mix
3 1/2 c quick oats
1/2 c milk or dark chocolate chips
1/2 c heath bar toffee chips
dash(es) sea salt
1/2 c shredded coconut (optional)

Steps:

  • 1. Melt margarine and stir in sugar, evaporated milk, and vanilla.
  • 2. Bring to a rolling boil over medium heat, stirring constantly. Boil for 1 minute.
  • 3. Remove from heat and add oats and dry pudding mix (and coconut, if using). Let sit for 5 minutes to slightly cool.
  • 4. Sprinkle toffee chips, salt and chocolate chips over top. Stir gently to just blend, being careful to not fully melt all the chips and toffee bits by stirring.
  • 5. Drop by teaspoons onto 2 or 3 waxed paper-lined cookie sheets.
  • 6. Let sit for an hour or two until firm. Remove from sheets and store in an air-tight container.

These are the best no-bake cookies I've ever had! The caramel is perfectly sweet and salty, and the pretzels add a nice crunch.

I had some trouble getting the caramel to set. I think I might have cooked it for too long.

These cookies are a bit too sweet for my taste. I think I'll try reducing the amount of sugar next time.

I'm not a big fan of caramel, but these cookies were still really good. The pretzels add a nice salty touch that balances out the sweetness of the caramel.
