Salmon Patties image

Growing up in a Catholic house my mom made various dishes palatable to us kids. This is one of them. Fridays during Lent were salmon patties or tuna noodle casserole. I put my own twist on these with French's fried onion rings.

Number Of Ingredients 9

2 14 oz. cans canned pink salmon
2 eggs
10-12 saltine crackers
1/2 c french's fried onions
1 tsp garlic powder
1 Tbsp dill, dried
1 green onion, chopped
2-3 springs fresh cilantro
2 Tbsp olive oil for frying

Steps:

  • 1. Drain the salmon. Discard the skin and pick out the bones. Put in a med sized bowl and break up with a fork.
  • 2. Chop onions and cilantro. Add to the salmon.
  • 3. Add the eggs, the french onions, and the garlic powder and dill.
  • 4. Crush up the saltine crackers and mix it all.
  • 5. Heat the oil in the pan, form patties and fry until golden brown. Enjoy!
