Growing up in a Catholic house my mom made various dishes palatable to us kids. This is one of them. Fridays during Lent were salmon patties or tuna noodle casserole. I put my own twist on these with French's fried onion rings.

Steps:
- 1. Drain the salmon. Discard the skin and pick out the bones. Put in a med sized bowl and break up with a fork.
- 2. Chop onions and cilantro. Add to the salmon.
- 3. Add the eggs, the french onions, and the garlic powder and dill.
- 4. Crush up the saltine crackers and mix it all.
- 5. Heat the oil in the pan, form patties and fry until golden brown. Enjoy!
