Salmon Loaf image

I found this recipe in an Atlanta Congregational church cookbook. It is delicious!

Number Of Ingredients 7

1 can(s) large, red salmon ( i use pink)
3 eggs,seperated
1/2 can(s) cream of mushroom soup
3/4 c quick cooking oatmeal
1 tsp lemon juice
1 Tbsp chopped onion
dash(es) ground black pepper

Steps:

  • 1. Turn oven on and set at 350* Break canned salmon up with fork.
  • 2. Mix yolks with mushroom soup, and add to salmon. Then add pepper, oatmeal and lemon juice and onion and mix well..
  • 3. Beat egg whites until stiff and fold into salmon mixture. Put into a large bread pan, or casserole dish, and bake for 1 hour or until done.. Enjoy!
