Salmon Fillets Encrusted w/Horseradish image

This is the one of the best meals I have made. I love it because I prepared it, cooked it, ate it, and cleaned up in 45 minutes. I LOVE IT. We love salmon and horseradish, it was fun mixing the two. The breadcrumbs add a nice litte crunch a pop of flavor. I made this with a cucumber salad.

1/2 c breadcrumbs
1 1/2-2 Tbsp olive oil, extra virgin
1 1/2 Tbsp fresh chopped dill
salt and pepper
4 salmon fillets
2 Tbsp horseradish

Steps:

  • 1. Mix the breadcrumbs, olive oil, and dill. Add a couple pinches of salt and pepper to taste.
  • 2. For easy clean up line a cookie sheet with aluminum foil. Place salmon and top each with a portion of the breadcrumb mixture. You will want to press it into the salmon.
  • 3. Bake at 475 degrees for 8-10 minutes. You will want the breadcrumbs to be golden brown.
