Salmon and Corn Fritters image

This recipe was originally based on using fresh salmon that is poached. Too much work! I substitute canned red salmon. If you feel lazy substitute fresh corn kernels with canned corn.

These fritters were a bit too oily for my taste. I think I would drain them on paper towels next time.

I'm not a big fan of salmon, but these fritters were really good. The corn and herbs helped to mask the fishy flavor, and the fritters were cooked perfectly.

This recipe was a great way to use up some leftover salmon. The fritters were crispy on the outside and fluffy on the inside. I loved the addition of the corn, which added a nice sweetness to the dish.
