Time 25m

Number Of Ingredients 9

1/2 loaf rustic bread
3 tablespoons plus 1/2 cup extra-virgin olive oil, divided
Coarse salt and freshly ground pepper
1/4 cup coarse-grain mustard
2 tablespoons finely chopped shallot
1/4 cup plus 2 tablespoons fresh lemon juice (from 2 lemons)
1/2 cup chopped fresh basil leaves
2 pounds mixed baby romaine, radicchio di Treviso, and Belgian endive (about 5 heads romaine, 3 heads radicchio, and 3 heads endive)
3 ounces Parmesan cheese, shaved into curls with a vegetable peeler

Steps:

  • Preheat oven to 400 degrees. Tear bread into bite-size pieces, and toss with 3 tablespoons oil. Season with salt and pepper. Bake on a rimmed baking sheet until golden brown, about 9 minutes.
  • Whisk together mustard, shallot, lemon juice, basil, and remaining 1/2 cup oil. Season with salt and pepper.
  • Trim core ends of salad greens. Cut romaine heads in half lengthwise, and radicchios and endives into quarters lengthwise. Place half the wedges on a platter, and drizzle with 1/4 cup dressing. Top with remaining wedges, and drizzle with another 1/4 cup dressing. Scatter with cheese and croutons, and serve remaining dressing on the side.

This salad was a bit too bitter for my taste. I think I'll try it again with less radicchio and endive next time.

I've never had radicchio or endive before, but I really enjoyed them in this salad. They added a nice depth of flavor.

I'm not usually a fan of salads, but this one is really good. The dressing is light and flavorful, and the greens are crisp and refreshing.

This salad is a great way to use up leftover greens. I had some romaine, radicchio, and endive that were starting to wilt, so I threw them all together with this dressing and it was delicious!

Loved the combination of flavors in this salad. The radicchio and endive added a nice bitterness that balanced out the sweetness of the romaine. The dressing was also spot-on.

This salad was so easy to make and it turned out great! I used store-bought dressing, but I'm sure it would be even better with homemade. I'll definitely be making this again.

I've made this salad several times now and it's always a crowd-pleaser. The flavors are well-balanced and the dressing is delicious. I like to add a bit of crumbled goat cheese or blue cheese for an extra touch of flavor.

This salad was a hit at my last dinner party! The combination of romaine, radicchio, and endive was unique and refreshing, and the dressing was light and tangy. I highly recommend trying this recipe.
