Steps:
- 1. Season each chicken breast with about 1 tbl Cajun seasoning, or to taste. 2. Grill chicken or heat a large skillet over medium heat, add the 2 tbl butter and cook chicken in skillet. 3. Combine the mayo, garlic paste & chipotle. 4. Toast sandwich rolls until light golden brown on the grill or in the oven. Remove rolls, then add the cheese to the top half of the bun, & place back on grill or under broiler until the cheese is melted. 5. Slather the chipotle mayo on the bottom of the bun, top with cooked Cajun chicken breast, tomato & lettuce.
