1 1/2 lbs jumbo shrimp, peeled and deveined
2 tablespoons fresh lemon juice
1/2 teaspoon minced fresh garlic
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
5 cups arugula leaves
1/2 cup vertically sliced red onion

4 teaspoons olive oil
1 thinly sliced garlic clove
1/8 teaspoon salt
4 slices ciabatta (1/2-inch thick)

This recipe was a bit too bland for my taste. I added some extra spices and it turned out much better. I would recommend this recipe to others who enjoy mild flavors.

I'm a vegetarian, so I made this recipe without the shrimp. The salad was still very tasty and satisfying. I would definitely make this recipe again.
