I'm allergic to parmesan cheese, so I used grated cheddar cheese instead. The potatoes were still delicious.

I'm not a big fan of garlic, so I only used half the amount called for in the recipe. The potatoes were still plenty flavorful.

I added some chopped green onions to the potatoes before roasting them. It gave them a nice pop of color and flavor.

I didn't have any bacon on hand, so I used turkey bacon instead. It worked just as well and the potatoes were still delicious.
