1 pint brussels sprouts (about a pound)
4 to 6 tablespoons extra virgin olive oil, to coat bottom of pan
5 cloves garlic, peeled
Salt and pepper to taste
1 tablespoon balsamic vinegar

  • Heat oven to 400 degrees. Trim bottom of brussels sprouts, and slice each in half top to bottom. Heat oil in cast-iron pan over medium-high heat until it shimmers; put sprouts cut side down in one layer in pan. Put in garlic, and sprinkle with salt and pepper.

I was disappointed with these. The sprouts were mushy and the garlic was raw. I think I'll try a different recipe.

These were a bit too spicy for my taste, but still very flavorful. I think I'll use less chili powder next time.

I was disappointed with these. The sprouts were tough and the garlic was burnt. I think I'll stick to my old recipe.

These were a bit too crispy for my taste, but still very flavorful. I think I'll try roasting them for a shorter amount of time next time.

I'm not usually a fan of Brussels sprouts, but these were amazing! The roasting process really brought out their natural sweetness, and the garlic and herbs added a great depth of flavor.
