Rise & Shine Muffins image

These muffins could be called "Kitchen Sink Muffins". LOL They are a hearty way to start the day and taste yummy!

Yield 12 muffins

Number Of Ingredients 15

2 cups flour
1 1/4 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 apple, peeled and chopped
1/2 cup crushed pineapple, drained
2 cups grated carrots
1/2 cup chopped dates or 1/2 cup chopped raisins
1/2 cup chopped nuts
1/2 cup coconut flakes
1/2 cup chocolate chips (Optional)
2 eggs
3/4 cup oil
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 350.
  • Mix the first 12 ingredients together.
  • Next add remaining 3 ingredients.
  • Mix well.
  • Using greased muffin cups or paper lined cups, fill 3/4 full of batter.
  • Bake at 350 for 20-25 minutes.
