Rhubarb Pudding Cake image

In this unusual recipe from the 1950's a rhubarb cake makes its own pudding (sauce or topping) on the bottom as it bakes. Scoop out a serving and flop it over to showcase the pretty sauce. Good with ice cream.

This cake was a disaster. The cake batter was too thick and the rhubarb filling was too runny. The cake didn't rise properly and it was very dense. I don't recommend this recipe.

This cake was a bit too sweet for my taste, but it was still very good. The rhubarb filling was delicious and the cake was moist and fluffy. I think I would reduce the amount of sugar in the cake batter next time I make it.

I followed the recipe exactly and the cake turned out perfect. It was so moist and flavorful, and the rhubarb filling was the perfect amount of tartness. I served it with a dollop of whipped cream and it was a hit with my family.
