Rhubarb Pizza image

Growing up in IA, we always welcomed a new Rhubarb recipe.

Number Of Ingredients 12

1 c flour
1 tsp baking powder
2 Tbsp margarine
1 egg, beaten
2 Tbsp milk
3 c rhubarb, diced
1 - 3 oz pkg red gelatin powder
TOPPING
3/4 c granulated sugar
1/2 c flour
1/2 c margarine
1/2 tsp cinnamon, ground

Steps:

  • 1. Combine 1 cup flour and baking powder. Cut in 2 T. margarine. Add beaten egg and milk. Press on to pizza pan.
  • 2. Cover with raw rhubarb. Sprinkle with red gelatin. Let set while preparing topping.
  • 3. Combine topping ingredients. Sprinkle topping over rhubarb.
  • 4. Bake at 350 degrees for 45 minutes. Cool. Cut into wedges.

The crust was a bit soggy, but the overall flavor of the pizza was good. I would recommend using a different crust recipe or cooking the pizza for a bit longer.
