Time 2h30m

Yield 4

Number Of Ingredients 5

4 cups diced rhubarb
½ cup water
½ cup white sugar
4 cups ice
⅔ cup tequila

Steps:

  • Place the rhubarb into a saucepan, and pour in the water. Cover, and bring to a simmer over medium heat. Reduce heat to medium-low, and continue simmering until the rhubarb breaks down and releases its juices, about 15 minutes. Strain the juice, and press the pulp to squeeze out as much liquid as you can. Discard the pulp, and stir the sugar into the hot juice. Refrigerate the syrup until very cold, at least 2 hours.
  • To prepare the margaritas, place the ice into a blender, then pour in the tequila and rhubarb syrup. Blend until smooth, or until pureed to your desired consistency. Pour into chilled margarita glasses to serve.

This is the worst margarita I've ever had. I don't recommend this recipe to anyone.

I was really disappointed with this recipe. The margarita was too sour and the rhubarb flavor was overpowering.

This recipe is too complicated. I don't have time to make a simple syrup and then muddle the rhubarb. I'm going to try a different recipe.

I followed the recipe exactly, but my margarita didn't turn out as good as I hoped. I think I might have used too much rhubarb.

This margarita is a bit too tart for my taste. I think I'll add a little more agave next time.

This margarita is a great way to use up leftover rhubarb. I always have a bunch of rhubarb in my garden, and this is a great way to use it up.

This rhubarb margarita was a hit at my last party! The combination of tart rhubarb and sweet agave was perfect, and the lime juice and tequila gave it a nice kick. I'll definitely be making this again.
