The filling for these stuffed green peppers is delicious! We found ourselves snacking on it as we stuffed the peppers. The seasoning is what makes it so special. It has a Tex-Mex flavor and the chipotle tabasco sauce gives these a nice kick. Yumm-o!

Steps:
- 1. Preheat oven to 350°. Spray both a 1 1/2 qt. casserole dish and a dish to fit peppers with non-stick spray. Set aside. Top and seed peppers. You can leave the peppers whole or may also cut the peppers in half if you wish. Dust peppers with salt, and place in the prepared dish and set aside.
- 2. In a very large skillet or a small Dutch oven, brown both beef and sausage; draining well. Add onion, garlic and saute. Add mushrooms and continue to saute. Add meat back to pan. Add seasonings and rice; stir to mix. Add remaining ingredients and mix well.
- 3. Carefully fill peppers. Place remaining extra filling in 1 1/2 quart dish. Top both peppers and extra filling with Parmesan cheese.
- 4. Place both dishes in preheated oven and bake for 20-25 minutes.
