Yield Makes 6 servings

Number Of Ingredients 7

1/3 cup red-wine vinegar
3 tablespoons Dijon mustard
Salt and pepper, to taste
1 cup extra-virgin olive oil
2 pounds small red new potatoes
3 scallions, thinly sliced
1/2 cup whole, flat-leaf parsley leaves

  • 2. Cook the potatoes in boiling salted water, about 20 minutes. Drain, cool and cut into quarters.
  • 3. Place the potatoes in a large bowl. Pour the dressing over the potatoes. Season with salt and pepper and toss carefully using a large rubber spatula. Sprinkle with the scallions and parsley; toss to combine.

The potatoes were a bit overcooked, but the mustard dressing was delicious. I'll try again with a shorter cooking time.

These potatoes were a bit bland for my taste. I think I would add some more herbs or spices next time.

I love this recipe! The potatoes are always perfectly cooked and the mustard dressing is so delicious. I often add some chopped bacon or crumbled blue cheese to the dressing for extra flavor.
