Raspberry Clafouti image

Clafouti is a baked custardlike cake that originated in the countryside of central France. "It is a rustic dish that is simple to make and tastes so good -- like a thick, moist, fruit-filled crepe," says chef Eric Ripert. This recipe is from Ripert's website. Photo by Gino Reyes.

I would not recommend this recipe. The clafouti was dense and dry.

The clafouti didn't turn out as well as I hoped. The custard was a little runny and the raspberries were too tart.

The clafouti was a little too sweet for my taste, but it was still very good.
