Ras El Hanout image

The king of spice mixes, this Moroccan curry-like mix has a delicious and subtle flavor. Use in tajines, grilled or fried meats, and soups. It is also great with cooked vegetables.

Number Of Ingredients 21

3 tablespoons paprika
2 1/2 tablespoons cumin
2 1/2 tablespoons ginger
4 teaspoons coriander
2 teaspoons cinnamon (cassia variety)
2 teaspoons turmeric
1 1/2 teaspoons fennel
1 1/2 teaspoons cardamom
1 1/4 teaspoons allspice
1 1/4 teaspoons dill seeds
1 1/4 teaspoons galangal
1 1/4 teaspoons lavender
1 1/4 teaspoons nutmeg
1/2 teaspoon bay leaf
1/2 teaspoon caraway seed
1/2 teaspoon cayenne
1/2 teaspoon clove
1/2 teaspoon cubeb pepper (or black pepper if you are unable to find cubeb)
1/2 teaspoon mace
1/2 teaspoon brown cardamom
35 saffron strands, stigmas

Steps:

  • Grind all ingredients and combine.
  • store in an airtight container in a cool, dark place.
