These look very good. Recipe is from Simple and Delicious. Update 3/21/09: I've made these recently and I think I will use only half of the ranch dressing mix the next time because I felt it was a little too strong. I will leave the original recipe as is, though.

The cubes were crispy and flavorful, but the ranch flavor was a bit too strong for me. Next time, I'll use a milder seasoning.

The cubes were a little too salty for our taste. Otherwise the recipe was good.

I added some chopped bacon to the cubes and they were amazing. Thanks for sharing this recipe!

I substituted olive oil for the butter and they still turned out great. A healthier version with no compromise on taste!

The ranch powder flavoring was overwhelming. I think it would be better with less seasoning.

The cubes were delicious. So easy to make too. I served them with a sour cream and chive dipping sauce and they were perfect. Definitely going into my regular rotation of go-to snacks.

These ranch potato cubes were a hit! They were crispy on the outside and fluffy on the inside, with a delicious ranch flavor. I will definitely be making these again.
