These look very good. Recipe is from Simple and Delicious. Update 3/21/09: I've made these recently and I think I will use only half of the ranch dressing mix the next time because I felt it was a little too strong. I will leave the original recipe as is, though.

- Place potatoes in a greased 11-inch by 7-inch baking dish; dot with butter.
- Cover and bake at 325 degrees for 60-65 minutes or until tender.
- Combine sour cream and salad dressing mix; spoon over potatoes.
- Sprinkle with cheese.
- Bake, uncovered, for 5-10 minutes or until cheese is melted.
