Radicchio and Plum Salad image

You can use almost any type of plum in this salad recipe, even hybrid ones like Pluots and Peacotums. If it looks like a plum, it probably acts like a plum too.

Yield 4 servings

Number Of Ingredients 8

4 slices bacon

2 tablespoons olive oil
1 teaspoon Dijon mustard
1 head of radicchio, leaves separated, larger leaves torn

  • Cook bacon in dry medium skillet over medium-low heat, turning occasionally, until crisp, 8-12 minutes. Transfer to paper towels to drain.
  • Reduce heat to low and cook shallot in same skillet, stirring often, until translucent, about 2 minutes. Add vinegar, oil, mustard, and 1 Tbsp. water and whisk until smooth.
  • Toss radicchio, plums, and olives in a large bowl. Drizzle dressing over; season with salt and pepper. Toss to coat.
  • Transfer salad to a platter, then crumble bacon over.

I love the combination of flavors in this salad. The bitterness of the radicchio is perfectly balanced by the sweetness of the plums and the creaminess of the goat cheese.

I'm not a huge fan of radicchio, but I really enjoyed this salad! The plums and goat cheese helped to balance out the bitterness of the radicchio.

The dressing was a bit too oily for my liking. I think I'll try using a different type of vinegar next time.

I found this salad to be a bit bland. I think it needed more salt and pepper, or maybe some additional herbs or spices.

This salad was a bit too bitter for my taste. I think next time I'll use less radicchio or add some sweetness to the dressing.
