Quick & Easy Reuben Casserole image

If you like Reuben sandwiches, you'll like this. And it's so easy and quick to make!

Number Of Ingredients 5

1 32 oz. sauerkraut, very well drained
1 lb deli style corned beef, chipped
1 8 oz. bottle thousand island dressing
1 lb swiss cheese, sliced
12 slice rye bread, buttered and cut into 1 inc. pieces

Steps:

  • 1. Preheat oven to 350°
  • 2. In the bottom of a 13x9 casserole, layer the sauerkraut (squeeze it dry in a tea towel or paper towels), corned beef, dressing and cheese. Top with buttered rye bread cubes. Bake uncovered for 30 minutes (or until warmed all the way through). Let cool slightly to set and it's ready to go.

This was a great way to use up leftover corned beef. I added some chopped cooked potatoes to the casserole, and it turned out really well.
