Quick and Easy Pumpkin Cupcakes image

My grandmother used to make these around the holidays. They are a big hit at office parties and with kids! They are very quick and easy. If you want icing, I recommend whipped cream cheese icing, but they are very good without it.

I'm not a huge fan of pumpkin, but these cupcakes were surprisingly good. The cream cheese frosting really helped to balance out the pumpkin flavor.

These cupcakes are a great way to use up leftover pumpkin puree. I always have a can or two in my pantry, so it's nice to have a recipe that I can use it in.
