Pumpkin Oatmeal Cookies image

These hearty moist cookies are chewy in texture and golden in color. They are easy to make - using cookie mix. pumpkin and oil. The pumpkin helps to reduce the fat and cholesterol.

Number Of Ingredients 6

17 1/2 oz oatmeal cookie mix
1/2 c canned pure solid pumpkin(libby's)
3 Tbsp vegetable oil
1 large egg
1/2 c raisins or dried cranberries
1/2 c chopped nuts

Steps:

  • 1. Heat oven to 375^. Combine cookie mix, pumpkin, oil, and egg in a large bowl. Stir in nuts and raisins. Drop by rounded teaspoonfuls, about 2 inches apart, onto ungreased baking sheets. Bake 10-12 minutes or until lightly browned and soft in centers. Cool on baking sheet for 1 minute; remove to wire racks to cool. Store in covered container.
