Pumpkin Nut Bars image

I made this up over Christmas holiday when I was faced with a can of pumpkin and a cake mix to make a dessert. The results were delicious!

Number Of Ingredients 17

1 box yellow cake mix
3 eggs
1/2 c oil
1/2 c applesauce
1 can(s) pumpkin, 16 oz.
1 c walnuts, chopped
1 Tbsp pumpkin pie spices
1 tsp vanilla
1/2 tsp orange peel
1 Tbsp orange juice (optional)
CREAM CHEESE FROSTING
1 pkg cream cheese, 3 oz (softened)
2 c powdered sugar
6 Tbsp butter, softened
1 Tbsp milk
1/2 tsp vanilla
1 tsp orange juice

Steps:

  • 1. Mix all ingredients for bars until well blended.
  • 2. Pour into greased 9x13 pan.
  • 3. Bake at 350 degrees for 35 minutes.
  • 4. Remove to cooling racks until completely cool, then frost with cream cheese frosting.
  • 5. For frosting: mix well with blender until creamy (at least 3 minutes). If too thick, thin with more orange juice or milk until you get a good, spreadable consistency.
