PUMPKIN CHOCOLATE CHIP COOKIES image

Yield Makes about 80- 3 inch cookies

Number Of Ingredients 16

8 oz. cream cheese
18 oz. canned pumpkin
1/2 c. buttermilk
1/2 c. vegetable oil, preferably canola
1 c. honey
1/2 c. maple syrup
2 t. vanilla extract
2-1/2 c. all purpose flour
1-3/4 c. whole wheat pastry flour
1 t. salt
1T. baking powder
1 t. baking soda
1-1/2 t. cinammon
3/4 t. powdered ginger
1/2 t. powdered cloves
15 oz. chocolate chips

Steps:

  • Preheat oven to 350. Mix together all the dry ingredients (flours, baking powder, baking soda, salt,and spices) with the exception of the chocolate chips and set aside. Cream the cream cheese and pumpkin in a stand mixer till well blended and soft. Add buttermilk, oil, honey and maple syrup and blend. Add the dry ingredient mixture a little at a time until well blended. Add the chocolate chips on low speed just until incorporated. Form into 3 inch rounds on a parchment lined baking sheet.Bake for 15-20 min. (depending on your oven) until the edges are nicely browned.
