Pumpernickel Bread for Bread Machine image

We love pumpernickel bread. It's great for Rueben sandwiches! You could make this into long hoagie rolls if you use only the dough setting and shape them yourself.

Time 2h40m

Number Of Ingredients 10

1/2 c milk
7 oz water
1 1/2 tsp salt
2 Tbsp molasses
1 1/2 tsp butter, softened
2 1/2 c bread flour
1 c rye flour
1 tsp onion powder
1 Tbsp cocoa powder for color (optional)
2 1/4 tsp active dry yeast (quick acting)

Steps:

  • 1. Place ingredients into bread machine pan in the order given. Use basic or whole wheat setting on the machine, and operate according to manufacturer's instructions.
  • 2. OR, use dough setting only. Turn dough out on oiled surface and shape your own bread. This would work well in a greased round casserole, let rise 1 hour, (can make cross mark on top after rising to allow escape of steam). Bake at 425 degrees about 25-30 minutes. You can even top with sesame seeds by using an egg wash and pressing the seeds in, as in the picture. (add seeds before baking)
  • 3. OR, shape into two regular loaves and place in greased smaller bread pans (8x4 inches). Let rise until double, about 45 minutes, then bake at 375 degrees for 25-30 minutes.

This bread was a bit too dry for my taste, but it was still good. I think I'll try adding a little bit of extra water next time.

I was a bit hesitant to try this recipe because I'm not a big fan of molasses, but I'm so glad I did. The bread is delicious! The molasses flavor is subtle and it adds a nice depth of flavor.

I'm not sure what I did wrong, but my bread turned out really dense and heavy. It was still edible, but it wasn't very good.

This bread was a bit too sour for my taste, but my husband loved it. He said it reminded him of the pumpernickel bread he used to eat in Germany.

This pumpernickel bread was fantastic! It had a lovely nutty flavor and a slightly sour tang. The crust was crispy and the crumb was moist and dense. I will definitely make this again.
