Steps:
- Saute the onion in a tablespoon butter until translucent and tender Combine the mashed potatoes with remaining butter cheese milk salt and pepper and cooked onion and place over low heat until cheese and butter are melted. Fold in beaten eggs. Turn into a greased two quart casserole or souffle dish and bake at 375 degree oven for 45 minutes, until potatoes are puffed and brown. Serve.
