I had some trouble finding prosciutto that was thin enough. I ended up using bacon instead.

The chipotle mayo was a bit too spicy for my taste. I would recommend using a milder sauce.

I found that the scallops cooked a little too quickly. I would recommend cooking them for a shorter amount of time.

I wasn't sure how the chipotle mayo would taste, but I was pleasantly surprised. It was the perfect complement to the scallops.

The prosciutto added a delicious salty flavor to the dish. I think it would also be good with bacon or pancetta.
