I love my pressure cooker, especially when I'm in a crunch for time. I make a lot of things with my cooker, but this is one of my favorites. I just love the way the flavors from the beef and vegetables intermingle. You can also use a beef roast instead of the stew beef and it is wonderful, too! Y'all enjoy!

Steps:
- 1. In a 6-quart pressure cooker, add stew beef and salt to taste. Cover with water. Lock down lid to pressure cooker and place rocker on top. Turn heat to high until rocker begins to rock. Reduce heat to maintain a gentle rocking action and set stove timer to 35 minutes.
- 2. While meat is cooking, peel and quarter potatoes and onion. Peel and slice carrots and set aside. When timer goes off, remove pressure cooker from heat. Carefully run a small stream of water over the side, being extremely careful not to allow the water to touch the rubber saftey release valve.
- 3. When pressure is fully released, remove lid from pressure cooker. Add vegetables and more salt, if desired and lock down lid. Replace rocker and return to high heat until rocker begins to rock. Reduce heat to maintain a gentle rocking action and set stove timer for 12 minutes.
- 4. When timer goes off, repeat cooling process as instructed in step #2. When pressure is fully released, remove lid and serve. You may transfer to serving platter, if desired, but you will need to remove meat and vegetables from liquid. Enjoy with rolls, biscuits or your favorite side dishes.
- 5. SAFEFY TIPS: NEVER fill pressure cooker more than 2/3 full! Always check your valves to make sure that they are clear. NEVER try to remove lid until ALL of the pressure is released. In Presto model, the safety release valve will fall down to resting position when all pressure has been released.
