Potpourri Soup image

This is a wonderfully easy soup made from leftover veggies. It fills the house with such a great aroma. We call it Potpourri Soup. You can try it with ground turkey instead of ground beef. If you do, replace one cup of the water with a small can of beef broth.

I'm not a huge fan of bell peppers, but they actually worked really well in this soup. The sweetness of the peppers balanced out the spiciness of the chili powder.

The soup was a bit too spicy for my taste, but that's easily fixed by adjusting the amount of chili powder.
